I have had a couple of requests for the recipe of the Pina Colada Cupcakes I made for the Superbowl. I found the recipe in my 200 under 200 calorie cookbook from Hungry Girl. My mom got it for me for my birthday last year and I just LOVE it!
The recipe is so easy, you won't even believe it!
Heat oven to 350
1 yellow cake mix 1 can of crushed pineapple (save just a little bit for frosting) 1 teaspoon of coconut extract (i add 3 capfuls of it - I like a little more coconut taste)
Combine all of the ingredients and stir together. Fill cupcake liners and bake for about 12-15 minutes. It varies by oven. I check them at about 12 minutes with a toothpick. Sometimes they need just a little longer.
Let them cool down while you make the "frosting".
1/2 tub of fat free 1 Sugar Free Vanilla Pudding Cup The rest of the crushed pineapple a few drops of the coconut extract (maybe one capful)
Whisk together and frost cupcakes!
Super delicious and easy recipe and only 100 calories a piece!!!
Disneystore.com had a sale a few weeks ago where all of their plush characters were buy one get one free! Jules has been collecting these for the past 2 years, so my mom and I loaded up!
As you can tell, someone was VERY excited to receive her gifts. She LOVES the Toy Story movie and cannot stop playing with her new toys and acting out scenes from the movies! :) Last night we made a paper chain to help Jules count down the days until we are at Disneyland!
We also worked on Julianna's Valentine's. She was SO excited to be able to pass out Valentine's this year at school. You should have seen the bag she came home with. A regular sized Grocery Paper sack decorated and filled with lots of Valentine Day goodies! :)
We got a surprise visit from these little cuties. (of course once again, Olivia was ALL about Drew. Even crying when he left the room. A.d.o.r.a.b.l.e.)
We had lots of little surprises for Jules on Monday Morning.
She LOVED waking up and seeing her message on the bathroom mirror. :) (please ignore the rather sad and forlorn looking mom in the mirror - yowza!)
A new Rapunzel doll to take to Disneyland!
When she came home from school, she had more goodies waiting for her. Lots of stuff for Disneyland!
It was a great day. I got to spend most of it with Drew and just love on Jules. I am so blessed to have a family that makes me SO happy!
I know, I know it has been over two weeks since my last post. We have just been dealing with a lot of stuff right now. I also just found my camera and saw all of the pics I still need to post!
Well as you now know, the Superbowl DID NOT go how we wanted it to go. It was rough from the beginning of the game, but we still had fun being fans all weekend and showing off our Steelers pride!
Jules LOVED her new shirt daddy had made just for her! :)
Courntey and Todd came over to watch the game with us. We feasted on typical game day food, Drew's chili, nachos and pizza. And I of course made cupcakes. Our new faves are my 100 calorie Pina Colada cupcakes. Delish! :)
The looks on Drew and Julianna's faces are priceless. So defeated. I love how Jules really got into the game with Drew. Too cute!
Whew! We were snowed in! I don't think our street was plowed until around 2 in the afternoon! And it was ffffffreeeeeezing!
It actually doesn't look that bad, but let me tell you, it took forever (for Drew) to shovel. Thankfully later that afternoon someone came and made a path in our driveway with a snowplow. Oh and did I mention it was FREEZING!?!
We had a GREAT time during our snow day. Drew was home with us too, so we snuggled in as a family and took advantage of our extra day together!
There was lots of movie watching....
....followed by Jules trying out her new iXl (we hold back some Christmas presents and bring them out of days such as this!) Maybe a little bit of cleaning.....

Can't think of a better way to spend a lazy day. LOVE these girls!
**this just in. SNOW DAY TOMORROW! Des Moines Public Schools, Iowa Christian Academy and Grandview Park Baptist just called off school for tomorrow! Happy dances are happening in our house right now! :) If you are equally as lucky to have a snow day tomorrow, enjoy these precious times when you can. I see board games, hot cocoa and family movies on the agenda for tomorrow! :)
This has been the chant in our house tonight! Girls are SO hoping for a snow day tomorrow. And if you saw what is happening outside our window right now, you would understand. It's a Crazy blizzard wonderland!
