Chef's Frugal Wife - "Baked" Potato Soup

This week was a little hectic, so my recipe isn't exactly from scratch, but it was cheap and oh so good!

This week we made potato soup using the mix from Bear Creek. I added bacon, scallions and cheese as toppings and made it more of a baked potato soup. It was wonderful! My mom uses this mix and adds italian sausage, corn, carrots and green beans. She made this for us when she was home in November and it was wonderful as well! Just some ideas to jazz it up a bit.

INGREDIENTS

1 Bag of Bear Creek Creamy Potato Soup Mix
*Bought at Hy-Vee. I bought it at the Pleasant Hill store because I stopped there before picking Julianna up. It is actually 0.50 cents cheaper there than it is in Ankeny. I paid $3.99 for the soup mix

3-4 slices of Bacon
*We had some left over from when we made "breakfast for dinner" on Monday.

1 bunch of scallions (green onions)
*0.59 cents at Hy-vee

1 cup of shredded cheese
*Block cheese was on sale this week at Hy-vee for 2 for $4.00, so I stocked up on colby jack and just shredded some of that to use.

Crushed Red Pepper (if desired)
*Always have on hand

Salt and Pepper
*Always have on hand

DIRECTIONS

Just follow the directions on the bag of soup mix. Basically bring 8 cups of water to a boil. Add in soup mix and whisk. Let cook for 15 minutes uncovered - stirring occasionally, add desired toppings and salt and pepper to taste. I added crushed red pepper, because I like my soups a little spicy. Serve and Enjoy!

One batch makes about 5-6 bowls. We had enough that I could bring a bowl for lunch the next day!

SERVED WITH

Fresh Red peppers

*They were on sale for .99 cents each at Hy-vee.

Crescent Rolls
*Hy-Vee $1.25 for a can. Bake according to directions on can.

NOTES

We absolutely loved this quick and easy meal. I think it took maybe 20 minutes to get everything prepared and ready to serve. Again you can jazz it up with what ever you want. I am thinking about adding chicken and corn next time for more of a chowder. For those of you in Iowa, this might be the perfect meal to serve tomorrow as we get yet another snow storm!!
